I got a couple of new Paleo cook books and I’ve been trying to make a new recipe every week.
That’s one of my goals and it’s working out pretty well. You should give it a try.
I wanted to give you a little spin on a taco salad recipe. It’s not the traditional Mexican version, it’s actually Greek. I was kind of skeptical but it’s crazy good.

Gyro Taco Salad & Tzatziki Guacamole
Ingredients for taco salad:
- 2 pounds of ground lamb
- 1 large yellow onion, diced
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon ground coriander
- 1/2 cup chicken stock
- 1 tablespoon lemon juice
- salt to taste
- 1 bag of romaine lettuce
Instructions:
- In a large saute pan, brown the lamb
- Once the lamb cooks halfway, add the onion and garlic, continue to cook until the onion is softened
- Add the oregano, thyme, coriander, chicken stock, lemon juice and salt
- Cook about 5 minutes more until the stock has reduced
Ingredients for the tzatziki guacamole:
- 2 ripe avocadoes
- 1 cucumber
- 1 tablespoon fresh mint
- 1 tablespoon fresh dill
- 1 tablespoon lemon juice
- salt to taste
Instructions:
- Shred the cucumber over a few paper towels
- Twist the paper towels up and squeeze it over the sink to remove excess water from the cucumber
- Blend avocados, squeezed cucumber, mint, dill, lemon and salt until smooth
Put the chopped lettuce in a bowl with gyro meat and 1-2 spoonfuls of the guacamole.
