Try This Taco Salad

I got a couple of new Paleo cook books and I’ve been trying to make a new recipe every week.

That’s one of my goals and it’s working out pretty well. You should give it a try.

I wanted to give you a little spin on a taco salad recipe. It’s not the traditional Mexican version, it’s actually Greek. I was kind of skeptical but it’s crazy good.

Gyro Taco Salad & Tzatziki Guacamole

Ingredients for taco salad:

  • 2 pounds of ground lamb
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground coriander
  • 1/2 cup chicken stock
  • 1 tablespoon lemon juice
  • salt to taste
  • 1 bag of romaine lettuce

Instructions:

  • In a large saute pan, brown the lamb
  • Once the lamb cooks halfway, add the onion and garlic, continue to cook until the onion is softened
  • Add the oregano, thyme, coriander, chicken stock, lemon juice and salt
  • Cook about 5 minutes more until the stock has reduced

Ingredients for the tzatziki guacamole:

  •  2 ripe avocadoes
  • 1 cucumber
  • 1 tablespoon fresh mint
  • 1 tablespoon fresh dill
  • 1 tablespoon lemon juice
  • salt to taste

Instructions:

  •  Shred the cucumber over a few paper towels
  • Twist the paper towels up and squeeze it over the sink to remove excess water from the cucumber
  • Blend avocados, squeezed cucumber, mint, dill, lemon and salt until smooth

Put the chopped lettuce in a bowl with gyro meat and 1-2 spoonfuls of the guacamole.

Enjoy!
